Kadhi Pakora is one of the most favourite comfort food from our Punjabi Cuisine. Recipes of Kadhi vary from each state to state but we will be making our punjabi version. Kadhi is basically a gravy prepared by sour curd and Besan ( Gram Flour). The pakodas are an added texture to the gravy and gives a nice taste to the palate. Punjabi Kadhi pakoda is best suited with steamed rice for lunch and dinner ideas!

INGREDIENTS:

  1. 2 Cups Sour Curd
  2. 2 Cup Water
  3. 4 Teaspoon Besan( Gram Flour)
  4. 2 Tablespoon Oil
  5. 1 Teaspoon Ginger Green Chilli paste
  6. 1 Teaspoon Jeera (Cumin) seeds
  7. 1 Teaspoon Rai (Mustard) seeds
  8. A Pinch of Hing (Asafoetida)
  9. 6-7 Curry Leaves
  10. 2 Dry Red Chillies
  11. 1/2 Teaspoon sugar
  12. 1 Teaspoon Haldi (Turmeric)
  13. 1/2 Teaspoon Red Chilli Powder
  14. 1/2 Teaspoon Garam Masala
  15. 1 Tablespoon Fresh Chopped Coriander
  16. Salt to taste
  17. Black pepper to taste

FOR PAKODAS

  1. 1/2 Cup Besan (Gram Flour)
  2. 1 Small Onion Chopped
  3. 1/4 Teaspoon Soda-bi-Carbonate
  4. 1 Teaspoon Kasoori Methi(Dried Fenugreek leaves)
  5. Salt to taste
  6. Black pepper to taste
  7. Red Chilli powder to taste

PREPARATION TIME: 30 minutes

HOW TO PREPARE:

  • FOR PAKODAS – Mix all ingredients of pakoda and add little water to make a thick batter
  • Batter should be of dropping consistency.  Fry little batter to make small pakodas
  • For Healthy version microwave the batter in small idli moulds for 1-2 minutes at 100% power
  • Heat oil in a wok, crackle Jeera, Rai, Hing, Curry Leaves, Red Chilli, Turmeric and Salt
  • After a minute add ginger green chilli paste and saute for a minute or two
  • Beat Curd water and Besan to form a smooth batter without lumps.
  • Add this mixture to the wok and keep stirring till its a little thick
  • Add water if its too thick, keep stirring while cooking
  • Add the fried/Microwaved pakodas and let it boil for 5 minute
  • The gravy should be like yellow thick runny gravy with pakodas
  • Once done Serve hot with Steamed Rice garnished with fresh chopped coriander leaves

 

 

 

INGREDIENTS:
1) 1/4 Cup Butter
2) 1 Cup Condensed Milk
3) 50gms Milk Chocolate
4) 2 Teaspoon Cocoa Powder
5) Few Drops of Vanilla Essence
6) Pinch of salt

PREPARATION TIME: 1 Hour 20 minutes

HOW TO PREPARE:
* In a bowl, heat butter and add condensed milk
* Cook it on simmer flame, add pinch of salt
* Break the chocolates into small pieces and add it to the pan
* Add Vanilla essence and mix continuously
* Add cocoa powder and mix well, cook till the mixture starts leaving sides
* When mixture tries to come together, take off heat and let it chill for an hour
* It forms dough like consistency, take small portions and make small balls out of it
* Cover the balls in different sprinklers and condiments or crushed oreo biscuits
* You can make a white truffle too with white chocolate and no cocoa powder
* Serve at room temperature! Its a hit with kids!!

INGREDIENTS:
1) 1 Packet of Marie biscuits
2) 1 Packet of Hide ‘n’ Seek Biscuits
3) 1 Packet of Parle G biscuits
4) 1 1/2 Teaspoon of Baking Powder
5) 1 Tablespoon chocolate Sauce
6) 1 cup Milk
7) Oil for greasing

PREPARATION TIME: 10 minutes

HOW TO PREPARE:
* Grind the biscuits into powder form and keep it in a bowl
* Add Milk, Baking powder, Chocolate sauce and mix well
* Grease the cake bowl and add the batter to the bowl
* Microwave the batter for 4 minutes and done!
* Pour Chocolate Sauce over it before serving!

INGREDIENTS:
1) 1/4 Cup Sugar
2) 1/4 Cup Flour/Maida
3) 2 Tablespoon Cocoa Powder
4) Pinch of salt
5) 2 Tablespoon Oil(refined/olive)
6) 3 Tablespoon water
7) 1 Scoop Vanilla Ice cream(optional)

PREPARATION TIME: 5 Mins

HOW TO PREPARE:
* Add all dry ingredients in a cup
* Add oil and water to it
* Mix till the mixture gets consistent
* Microwave for 1 min 40 sec. Its done!!
* Serve hot or with ice cream scoop

INGREDIENTS:
1) 4 Potatoes
2) 1 Onion Chopped
3) 1/4 Teaspoon Red Chilli Powder
4) 1 Cup Green Peas
5) 2 Green Chillies
6) 1 Tablespoon Lemon juice
7) Salt to taste
8) Black Pepper to taste
9) 2 Tablespoon Tomato sauce/ Saunth ki Chutney
10) 2 Tablespoon Curd
11) 1 Tablespoon green coriander
12) 1 Teaspoon Roasted Jeera powder/ Cumin seeds
13) 1/2 Teaspoon Chat Masala Powder
14) Few Peanuts
15) 1/4 Cup Pomegranate seeds

PREPARATION TIME: 15 Mins

HOW TO PREPARE:
* Boil Potatoes and Peas in a microwave safe bowl for 5 – 6 minutes
* Peel potatoes and cut into small pieces
* Microwave oil in microwave safe bowl for 30 seconds.
* Add Onion, Green Chillies and microwave for 2 minutes
* Mix all ingredients and microwave for 1 minute
* Garnish with green coriander, pomegranate and peanuts
* Serve hot/cold with Saunth/Curd

INGREDIENTS:
1) 200 gms Green Chillies
2) 2 Teaspoon Oil
3) 1/2 Teaspoon Saunf / Aniseed
4) 1/2 Teaspoon Methi Dana / Fenugreek Seeds
5) 1 Teaspoon Aamchoor/ Dry Mango Powder
6) 1/2 Teaspoon Dhania / Coriander Powder
7) 1 Teaspoon Red Chilli Powder
8) 1/2 Teaspoon Haldi / Turmeric Powder
9) 2 Teaspoon Imli / Tamarind Paste
10) Salt to taste

PREPARATION TIME : 7 Minutes

HOW TO PREPARE:
* Wash and Wipe Green Chillies and slit them with knife
* Add Oil to Microwave Safe bowl and microwave it for 30 Seconds at 100% Power
* Crush Saunf and Methi dana and keep aside
* Put all dry spices and microwave for 2 -3 minutes at 100% power. stir in between.
* Add Slit Chillies and 1/2 Cup water and microwave for 3 – 4 minutes at 100% Power
* Add Tamarind Paste and microwave for 1 – 2 minutes at 100% power. Stir in Between
* Store in a jar when cool down but must be consumed within a week
* Serve with any meal

INGREDIENTS:
1) 3 – 4 Potatoes
2) 2 Teaspoon Olive Oil
3) Salt to taste
4) Black Pepper to taste
5) 1/4 Teaspoon red chilli powder
6) 1 Teaspoon Jeera/Cummin Powder
7) 1/2 Teaspoon Garam Masala
8) 1/2 Teaspoon Dry Pudina/Mint Leaves Powder

PREPARATION TIME: 20 mins

HOW TO PREPARE:
* Cut the potatoes into wedges and put them in a microwave safe bowl
* Add Oil to potatoes and mix well
* Microwave for 2 – 3 mins at 100% power
* Add all dry ingredients to potatoes and mix well
* Again Microwave for 15 – 16 mins, mixing potatoes in between
* If still not done then microwave for 2 – 3 mins more
* Serve hot with paranthas or have them hot with tea on a rainy day
** Good for children as it can be giving in tiffin too!!

INGREDIENTS:
1) 1 Cup flour (Maida)
2) 1 Cup Cream (Malai)
3) 1 Cup Sugar
4) 1/2 Cup Curd/Yogurt
5) Pinch of salt
6) 5 Teaspoon Milk
7) 1 Teaspoon Baking Powder
8) 1/2 Teaspoon Soda-bi-Carbonate
9) 1 Packet Gems/M&M to decorate
10) Few Choco chips to decorate

PREPARATION TIME: 30 mins

HOW TO PREPARE:

* Mix Flour, Baking Powder, Soda-bi-carbonate and salt, Keep aside
* Beat Cream and Sugar together untill fluffy
* Add Curd and beat well
* Mix in Flour mixture untill you get a smooth batter
* Add Milk and mix well
* Grease a microwave dish and pour in the mixture
* Microwave on 60% power for 8 – 10 mins
* Check with a fork in the middle of the cake if it is cooked
* Cool the cake on the wire rack for 10 mins
* Decorate with Gems and Choco Chips
* Serve in slices with tea/coffee

INGREDIENTS:
1) 1 Cup of Paneer cubes
2) 1 Cup of Mixed colored Capsicums diced(Medium)
3) 1/2 Cup of Onion Diced(Medium)
4) 1/2 Cup of Cauliflower
5) 1/2 Cup of Tomatoes Deseeded Diced(Medium)
6) 1/2 Cup of Grapes
7) 1/2 Cup of Pineapple Cubes
8) 1/2 Cup of Boiled Peas and Corns Mixed
9) 5 – 6 BabyCorns
10) Few Spinach Leaves chopped for garnishing
11) Few Coriander Leaves chopped for Garnishing
12) 2 Lemon Juice
13) Salt to taste
14) 1/2 Teaspoon Garam Masala
15) 1/2 Teaspoon Chaat Masala
16) 1 Tablespoon Olive Oil

PREPARATION TIME: 15 Mins

HOW TO PREPARE:
* Mix All the ingredients except coriander leaves and olive oil
* Keep aside for 1 hour to marinate
* After an hour add 1/2 tablesppon of Olive oil and mix well
* Preheat Grill or Microwave
* Grill for 15 mins, mix in between
* When Done, Add rest of the Olive oil
* Garnish with Coriander Leaves and Serve

More ingredients can be added like boiled potatoes, boiled carrots, boiled chikpeas, boiled black chana, sprouts, cabbage, boiled soya nuggets, Boiled chicken pieces, etc.
It is healthy and light!
