METHI MALAI PANEER



INGREDIENTS:
1) 250 gms Paneer/Cottage Cheese
2) 2 Onions
3) 2 Tomatoes
4) 1 Teaspoon Ginger Garlic Paste
5) 1/2 Cup Cream
6) 1/4 Cup Kasoori Methi/Dried Fenugreek
7) 2 Tablespoon oil
8) 1/4 teaspoon Cumin/Jeera seeds
9) A pinch of Methi seeds/fenugreek seeds
10) Few Peppercorns
11) 1/4 Teaspoon Fennel seeds
12) Fresh coriander for garnish

PREPARATION TIME: 30 Minutes

HOW TO PREPARE:
* In a dry pan, dry roast fennel, cumin seeds, methi seeds and peppercorns
* Grind them after roasting into fine powder, keep aside for later use
* Make a paste of onions and tomatoes seperately
* In a pan, heat up oil and add onion paste, saute till color turns brown
* Add Ginger garlic paste, and saute for few minutes
* Add tomato paste and cook till it starts to stick on the bottom
* Add dried roasted seeds powder and a little water and let it cook to a boil
* Add paneer cubes and dried fenugreek and let it cook
* Pour in malai to get a rich flavour and creamy texture
* Cook till the gravy thickens, take off heat
* Serve hot and garnish well with fresh coriander

HONEY PANEER WITH BEANS



INGREDIENTS:
1) 500gms Paneer/Indian Cottage Cheese
2) 2 Cups Trimmed Beans
3) 2 Onions Chopped
4) 2 Tomatoes Chopped
5) 1 Teaspoon Ginger Paste
6) 1 Teaspoon Garlic Paste
7) 2 Tablespoon Oil
8) 1 Teaspoon Coriander powder
9) 1/2 Teaspoon Garam Masala
10) 1/2 Teaspoon Jeera Powder
11) 1/2 Teaspoon Red Chilly Powder
12) 1/2 Teaspoon Turmeric Powder
13) Salt to taste
14) 1/2 Teaspoon Jeera Seeds
15) 1 Tablespoon Honey
16) A Pinch of Asafoetida

PREPARATION TIME: 30 Minutes

HOW TO PREPARE:
* Wash and cut the trimmed beans into an inch lenghts
* Cut the paneer in cubes and keep aside
* In a wok, heat up oil and crackle jeera seeds and asafoetida
* Add Onions and turmeric, saute till onions go soft
* Add Ginger and garlic paste and saute till the mix turns brown
* Add honey and little water and mix everything
* Add garam masala, coriander powder, jeera powder, and red chilly
* Add Tomato puree and let it cook for few minutes
* Add the beans and cook till beans get soft
* Finally add in paneer and give it a boil
* Garnish with fresh coriander and serve hot

SWEET N SOUR VEGGIES WITH RICE AND GRILLED CHEESE


INGREDIENTS:
1) 2 Cup Rice
2) 250 Gms Paneer/Cottage Cheese
3) 1/4 Cup diagonally sliced french beans
4) 1 Cup parboiled cauliflower florets
5) 1/2 Cup Diagonally sliced babycorns
6) 1/4 Cup fresh pineapple cubes
7) 1/2 Cup capsicum diced
8) 1/4 Cup Boiled Peas
9) 1/4 Cup Carrots Diced
10) 2 Teaspoon chopped green chillies
11) 2 Tablespoon Oil
12) Salt to taste
13) 1 Tablespoon Vinegar
14) 1 Tablespoon Sugar
15) 1 Cup Water
16) 1 Tablespoon Cornflour
17) 3 Tablespoon Tomato Sauce
18) 2 Teaspoon soya sauce
19) 1 Tomato Chopped

PREPARATION TIME: 30 Minutes

HOW TO PREPARE:
* Heat the oil in a pan, add beans and sauté till they are tender
* Add the remaining vegetables and cook for 3-4 minutes
* Add Tomato, Tomato Sauce, vinegar, sugar, and soya sauce
* In a bowl mix cornflour in water and add it to the pan
* Add Salt and let the sauce get thicken
* Add Pineapple, mix well and bring to a boil, Done - Keep Aside
* On a grilling pan, add little oil and keep slices of paneer to grill
* Sprinkle salt on paneer slices when done and keep aside
* In a Pan cook rice, When done fill a bowl with cooked rice
* On a plate, invert the bowl of rice, to make a mountain of rice
* Pour in some sweet and sour vegetables and sauce
* Decorate the rice mountain with grilled paneer
* Serve hot and enjoy!!

PANEER KHURCHAN


INGREDIENTS:
1) 250 gms Paneer/Cottage Cheese
2) 2 Capsicums chopped
3) 2 Onions Chopped
4) 2 Tomatoes Chopped
5) 1 Teaspoon Jeera/Cummin Seeds
6) 1/2 Teaspoon Jeera Powder
7) 1 Teaspoon Coriander Powder
8) 1 Teaspoon Red Chilli Powder
9) 1/2 Teaspoon Turmeric Powder
10) Salt to taste
11) 1 Tablespoon Ginger Garlic Paste
12) 1 Teaspoon Green Chilli Chopped
13) Fresh Coriander Leaves Chopped
14) 1 Lemon Juice
15) 2 Tablespoon Oil

PREPARATION TIME: 20 Minutes

HOW TO PREPARE:
* In a wok heat oil and crackle jeera seeds
* Add Ginger Garlic paste and green chillies and cook for a minute
* Add onions and saute till they turn translucent
* Add Tomatoes and cook till they go soft
* To make tomatoes soft quickly add salt
* Add Salt, red chilli, Turmeric powder, and saute for few minutes
* Add Coriander powder and Jeera powder
* To the masala add chopped capsicum and cook till they are half done
* Finally add paneer cubes and cook till its done
* Turn off gas and add lemon juice and mix well
* Garnish with coriander leaves and serve hot with chapatis or nan

INSTANT GULAB JAMOONS


On occassion of Dhanteras and Diwali i present instant gulab jamoon which requires hardly 30 minutes of your time!!
INGREDIENTS:
1) 1 cup Mawa/Khoya
2) 1/2 Cup Paneer
3) 2 Tablespoon Maida
4) 1 Teaspoon Baking powder
5) 3 Cup Sugar
6) 1/2 Teaspoon Elaichi/Cardomom powder
7) Oil for frying

PREPARATION TIME: 30 Minutes

HOW TO PREPARE:
* In a wok add oil and let it heat up for frying
* In a bowl mix khoya, maida, paneer and baking powder
* Mix well so that no lumps there and forms like a dough
* Make balls and fry them in the wok till brown
* In a pan add sugar and 1 cup water, let it boil
* Add cardamom powder and boil till 1 string consistency
* Put all fried balls into the sugar syrup and give them a boil each
* Take out all gulab jamoons from sugar syrup and serve in a dish
* For cupcakes, i made a 2 string sugar syrup
* For Cupcakes, i strained the jamoons from extra sugar syrup
* Done!

PALAK PANEER


INGREDIENTS:
1) 2 Bunches Palak/Spinach Leaves
2) 250gms Paneer/Cottage Cheese
3) 2 Onions Chopped
4) 2 Tomatoes Chopped
5) 1 Tablespoon Ginger garlic paste
6) 1 Green Chilli
7) 1/2 Teaspoon Turmeric Powder
8) 1 Teaspoon Coriander powder
9) 1/2 Teaspoon Garam Masala
10) 1/2 Teaspoon Red Chilli Powder
11) Salt to taste
12) 1/2 Cup Fresh Cream
13) 1 Tablespoon oil

PREPARATION TIME: 30 minutes

HOW TO PREPARE:
* Cut the paneer into cubes or small triangles and keep aside
* Wash the palak and boil it for 5 min with 1/2 cup water
* Make puree of this boiled palak and keep aside
* In a wok heat oil, add onions and saute till they change color
* Add ginger garlic paste and cook for few minutes
* Add turmeric powder and red chilli powder
* After cooking for a minute add tomatoes, cook till they become soft
* Add coriander powder and garam masala powder
* Add Palak puree and salt and cook for 10 minutes
* Finally add paneer and cook for a minute
* Serve hot with parathas and chapatis
* Before serving add a dash of fresh cream on the palak paneer

PANEER ON SALSA



INGREDIENTS:
1) 1 cup fresh paneer/ cottage cheese cubes
2) 1 Cup Green Capsicum chopped
3) 1 Cup Onion Chopped
4) 1 Cup Tomato Chopped
5) 1/4 Cup Fresh Coriander Chopped
6) 2 Green chillies finely chopped
7) 1 Lemon juice
8) 1 Tablespoon honey
9) 1 Teaspoon Jeera/Cummin powder
10) Salt to taste
11) Black Pepper to taste
12) 1 Tablespoon soya sauce
13) 1 Teaspoon Mustard sauce

PREPARATION TIME: 30 Minutes

HOW TO PREPARE:
* dice the paneer into cubes and keep aside at room temperature
* In a bowl, mix rest of the ingredients and refrigerate for half an hour
* Pour the mix on the serving dish and spread it
* Place the paneer cubes on the salsa
* Sprinkle salt or Chaat Masala on top and serve

PANEER/ COTTAGE CHEESE SANDWICH


INGREDIENTS:
1) 4 Brown bread/ Whole wheat Bread
2) 1 cup Paneer/ Cottage Cheese crumbled
3) 1 Onion Chopped
4) 1 Capsicum Chopped
5) 1 Tomato Chopped
6) 1 Teaspoon Pasta Sauce
7) Salt to taste
8) Black pepper to taste
9) 1 - 2 Teaspoon Ghee / Clarified Butter

PREPARATION TIME: 20 mins

HOW TO PREPARE:
* In a bowl mix paneer, onion, capsicum and tomato
* Add in pasta sauce, salt and pepper and mix well
* Brush the bread with ghee on both sides, keep aside
* Take on slice of bread and spread the paneer mixture on it
* Put another slice of bread on top
* Grill it in a griller or toast it in a toaster/Sandwich maker
* Once done serve hot with tomato ketchup or green coriander chutney

PUNJABI PANEER PARATHA'S


INGREDIENTS:
1) 1 Cup Atta / Wheat Flour - Makes 3 - 4 parathans
2) Salt to taste
3) Water as required
4) Paneer / Cottage Cheese Grated
5) Red Chilly Powder
6) Pinch of Ajwain / Carom Seeds
7) Ghee/Clarified Butter as required
8) Dried Fenugreek Leaves / Dried Methi Leaves
9) Green chillies chopped
10) 1 Onion Chopped

PREPARATION TIME: 10 Mins

HOW TO PREPARE:
* Add a pinch of salt and 1 teaspoon ghee to Atta
* Knead the flour with water, divide it into 3 parts and keep aside
* Take one part of atta and roll it round with a rolling pin till 5" in diameter
* Put Paneer, Onions and green chillies in the center of the rolled atta
* Sprinkle carom seeds, salt, Methi Leaves, red chilly powder and little dry flour
* Dry flour is sprinkled as it absorbs any moisture from the stuffing while rolling
* Bring the edges and join them in centre and press down
* Dust the working place with flour and roll the dough into a 7 - 8" diameter
* Place the parathas on tava or griddle and cook both sides for 2 - 3 mins till small brown spots appear
* Then add ghee as required on both sides and cook again for 1 - 2 mins
* Take it off from tava and serve hot
* Paneer parathans can be served with mango pickle, plain yogurt, raita or simply with hot tea/ Chai

SKEWERED PANEER WITH COLORS

INGREDIENTS:
1) 250 gms Fresh Paneer/Cottage Cheese, Cut into cubes
2) 2 Tomatoes diced
3) 2 Yellow Capsicum diced
4) 2 Green Capsicum diced
5) 1 Cup Cherries Cut into half
6) Few skewers
7) Salt to taste
8) Black Pepper to taste
9) 2 Teaspoon Lemon juice
10) Few pinches of dried coriander powder

PREPARATION TIME: 15 mins

HOW TO PREPARE:
* Take a skewer and arrange the ingredients in the following manner
* Green Capsicum, Paneer, Tomato, Yellow Capsicum, and Cherry
* Arrange the skewers in a bowl or a tray
* Finally add all spices and lemon juice and serve Chilled
* Also try to grill the ingredients before adding lemon juice and serve hot

MATAR CAPSICUM PANEER

INGREDIENTS:
1) 1 Cup Paneer/Cottage Cheese cut into cubes
2) 1 Cup Peas
3) 1 Capsicum Chopped
4) 1 Onion Chopped
5) 1 Tomato Chopped
6) 5-6 cloves of Garlic Chopped
7) 1" Ginger Grated
8) 2 Tablespoon Oil
9) 1 Teaspoon Jeera seeds
10) 1/2 Teaspoon Turmeric Powder
11) 1/2 Teaspoon Red Chilli Powder
12) 1/2 Teaspoon Garam Masala
13) 1 Teaspoon Jeera Powder
14) 1 Teaspoon Coriander Powder
15) Salt to taste

PREPARATION TIME: 30 mins

HOW TO PREPARE:
* In a pressure cooker or a pot add oil and crackle jeera seeds
* Add ginger and garlic and saute them
* Then add onions and let them get a pink brown color
* Add Tomatoes and all dry spices and saute for few minutes
* All spices(salt, jeera powder, red chilli, coriander, garam masala, turmeric)
* Add 1 glass of water, capsicum and peas and cook for 5 mins
* Finally add paneer and water again and close the lid
* Give 2 whistles if in cooker or cook for 20 mins in a pot
* Serve hot with coriander leaves as garnish

ALOO WALA SHAHI PANEER - Low cal


This is a low cal version of shahi paneer where kaju paste and cream is added
Here instead of Kaju we will use potato to get a thick gravy


INGREDIENTS:
1) 250 gms Paneer/Cottage Cheese
2) 3 Boiled and Mashed Potatoes
3) 2 Onions made into paste
4) 2 Tomatoes made into paste or Tomato Puree
5) 1 Tablespoon Ginger Garlic paste
6) 1 Teaspoon Coriander Powder
7) 1 Teaspoon Garam Masala
8) 1/2 Teaspoon Jeera Powder
9) 1/2 Teaspoon Red Chilli Powder
10) 1/2 Teaspoon Jeera/Cumin
11) Salt to taste
12) 1 Tablespoon Cream (optional)
13) 1 Chopped Capsicum
14) 2 Tablespoon oil
15) 1 Chopped green chillies

PREPARATION TIME: 30 mins

HOW TO PREPARE:
* Cut the paneer in cubes and keep aside
* Mash the potatoes with little water and oil till its smooth like batter
* In a Wok heat oil and crackle jeera, then add Ginger Garlic paste
* Saute for few mins then add mashed potatoes and mix well
* Saute till potatoes paste get a golden color
* Then add Onion paste and saute it for few minutes
* Then add tomato paste and green chillies, saute till oil releases
* Add coriander powder, garam masala, and jeera powder
* Add Red chilli powder, salt to taste and mix well
* Add 500ml water and give it a boil
* Add Capsicum and paneer and mix well
* Give 2 - 3 boils till gravy thickens
* If you have added too much water then add cornflour to thicken gravy
* Atlast add cream, mix well and take it off gas/flame
* Garnish with coriander and Serve hot with chapatis

TANDOORI SALAD

INGREDIENTS:
1) 1 Cup of Paneer cubes
2) 1 Cup of Mixed colored Capsicums diced(Medium)
3) 1/2 Cup of Onion Diced(Medium)
4) 1/2 Cup of Cauliflower Florets
5) 1/2 Cup of Tomatoes Deseeded Diced(Medium)
6) 1/2 Cup of Grapes
7) 1/2 Cup of Pineapple Cubes
8) 1/2 Cup of Boiled Peas and Corns Mixed
9) 5 - 6 BabyCorns
10) Few Spinach Leaves chopped for garnishing
11) Few Coriander Leaves chopped for Garnishing
12) 2 Lemon Juice
13) Salt to taste
14) 1/2 Teaspoon Garam Masala
15) 1/2 Teaspoon Chaat Masala
16) 1 Tablespoon Olive Oil

PREPARATION TIME: 15 Mins

HOW TO PREPARE:
* Mix All the ingredients except coriander leaves and olive oil
* Keep aside for 1 hour to marinate
* After an hour add 1/2 tablesppon of Olive oil and mix well
* Preheat Grill or Microwave
* Grill for 15 mins, mix in between
* When Done, Add rest of the Olive oil
* Garnish with Coriander Leaves and Serve


More ingredients can be added like boiled potatoes, boiled carrots, boiled chikpeas, boiled black chana, sprouts, cabbage, boiled soya nuggets, Boiled chicken pieces, etc.
It is healthy and light!
